2 pie crusts
3 cups of flour
1 heaping tsp salt
1 cup of shortening
Enough ice water until it’s barely sticking together. 1 tbsp at a time in sections.
Coconut cream filling
1 can coconut milk
1-1/4 cups half-and-half
¾ cup white sugar
½ cup all-purpose flour
2 large eggs, beaten
¼ teaspoon salt
Cook on medium heat til thick - about 15 min
Add
1 teaspoon vanilla extract
1 tbsp butter
1 cup coconut flakes
