Grandma's Spinach Salad

Spinach leaves

Craisins

Grated Swiss cheese

Bacon bits

Sliced mushrooms

Mandarin oranges

Dressing: (Makes enough for 2 salads)

2 T. poppy seed

2 t. salt

3/4 c. cider vinegar or 1/2 c red wine

1 1/2 c sugar

2 t. dry mustard

2 T. onion flakes or dried minced onions, crushed

2 c. salad oil

Aunt Lady's Banana Bread (6 loaves)

We lost our sweetheart sister this year, but here is one of her best recipes ever. If yo were lucky enough to taste her banana bread, you know it was memorable just like she is. Lady industriously sold her bread at the store from over-ripened bananas and it's delicious. It's okay to cry when you make it thinking about Lady and even sniff a little when you're eating it. Heaven knows I wasn't able to type it up withou crying. Thank you Lady for giving us such wonderful memories of your goodness and wisdom, for feeding half of Montana and of course for sharing your recipes. 


Cream together 2 c. shortening and 4 c sugar.

Add 8 eggs, beat into the cream mixture. 

12 overripe-mashed bananas, if they're small, add more

2 T. buttermilk (or sour milk)

Add the banans and milk to the creamed shortening, sugar mixture.

Stir together 

8 c flour

4 t. salt 

4 t. soda

Add to mixture

Add

1 c. chopped walnuts 

2 t. vanilla

Pour into greased pand and bake at 300 for 1 1/2 hours until done. *Do not preheat oven 

Aunt Li's Buffalo Dip

 8 oz cream cheese

2 T. melted butter

2 c. shredded chicken, Costco rotisserie

1/2 c hot sauce

1/2 c mozarella cheese

1/4-1/2 c. bleu cheese dressing


Spread cream cheese in bottom of 8x8 oven proof dish. Combine chicken, butter, hotsauce in a separate bowl and spread on top of cream cheese. Top with bleu cheese dressing and mozarella cheese Bake in pre-heated 300 degree oven for 20 minutes. Serve with tortilla chips or Doritos.

Aunt Lila's Favorite Blue Cheese Dressing

 1 c. mayonnaise

1/2 c sour cream

2 T. chopped onions

1 t. minced garlic

1/4 c parsley, chopped

1 T. lemon juice

1 T. vinegar

1/4 c or more of bleu cheese

Dash of cayenne and fresh black pepper.

Stir together and chill to mix flavors.

Classic Chicken Divan

 3-4 stalks broccoli

1/4 c butter

6 T flour

2 c chicken broth

1/2 c whipping cream

1/2 -1 c shredded parmesan cheese

3 chicken breasts, cooked and shredded

1/4 c Parmesan cheese


Cook broccoli Melt butter. Blend in flour. Add 1/2 t. salt and dash pepper. Add chicken broth and cook and stir till mixture chicken and bubbles. Stir in cream. Stir in parmesan cheese.

Place broccoli in casserole dish. Pour half the sauce over. Add chicken. Top with remaining sauce. Sprinkle with additional parmesan cheese.

Bake at 350 for 20 min. or till heated through. Then broil just till sauce is golden about 5 minutes.

*I like to double the sauce.

Cindi's "Conference" Cake

 This conference cake is a big tradition for our Sunday morning conference breakfast. 


1/2 c. canola oil

2 beaten eggs

1 c. milk

Combine

3 c. flour

1 1/2 c sugar

4 t. baking pwd

1 t. salt

Stir together dry ingredients and then add to wet ingredients. Mix well. Pour into a greased 9x13 pan.

2 c brown sugar

4 T. flour

4 t. cinnamon

4 T. melted butter

2 c. broken nuts

Mix and sprinkle on cake.  

Bake at 350 for 40-45 minutes. (I do the toothpick test in the center to determine when it is done)

White Chicken Chili

 1 Rotisserie chicken, remove chicken and shred

1 onion, diced

1 1/2 garlic, minced

1 T olive oil

Saute veggies in olive oil until fragrant

Add:

1 14 oz. chicken broth

1 t. salt

1 t. oregano

1 t. cumin

1/2 t. pepper

1/8-1/4 cayenne pepper

2 cans white norther beans

2 small can diced green chilies

Simmer 30 minutes uncovered.

Add:

1 c. sour cream

Heat until warmed through.


Ellen's Shrimp Dip

8 oz cream cheese

1 pck pimento cream cheese

1 pck cream cheese with chives

Miracle whip for consistency

Ketchup to taste

Worcestershire Sauce to taste

Shake of garlic sauce

1 can shrimp


Great with veggies and chips


Subby's Stew

2 lbs. stew meat, cubed

8 med potatoes (prefer yellow or red), cut into 1/2 inch pieces

8 large carrots,  cut into 1/2 inch pieces

2 bay leaves

1 package dry onion soup mix

1 can cream of mushroom soup

1 can cream of celery soup 

1 can tomato sauce

Bake

325 for 3 hours

275 for 6 hours

250 for 8 hours

French Bread Chicken Salad Sandwiches

 

1 c. shredded chicken

1 can olives, sliced

1/2 c. sliced green onions

1 c. shredded cheese (I usually use colby/jack

Mix together

Dressing:

2/3 c may

11/2 t. dijon mustard

Mrs. Dash garlic and herb season to taste


Coat chicken mixture with dressing. Slice a loaf of french bread lengthwise. Spread chicken mixture on each half. Top with thin slices of provolone cheese. Bake in oven at 350 for 20 min (just to warm chicken mixture and melt provolone.

It's a fun New Year's Day lunch treat!
